Slow Cooker Overnight Oats

It’s autumn now and generally this is the season when people start to bring out their slow-cookers from the back of their pantries! This overnight oatmeal is prepared in a slow-cooker and allows you to wake up to a warm bowl of delicious oatmeal. Oatmeal is a good source of fiber, which helps to keep you full throughout the morning! Store the rest in the fridge and reheat for a warm nutritious breakfast every day of the week.

Prep Time: 5 minutes

Cook Time: 8 hours

Makes: 8 servings

Ingredients:

8 cup water

2 cups steel-cut oats

1/3 cup dried cranberries

1/3 cup dried apricots, chopped

1/4 teaspoon salt, or to taste

Preparation:

  1. Combine water, oats, dried cranberries, dried apricots and salt in a 5 or 6 quart slow cooker.
  2. Turn heat to low. Put the lid on and cook until the oats are tender and creamy, about 7 to 8 hours.
  3. Enjoy!
