Just in time for Thanksgiving! This is a perfect dish that you can start and put aside while continuing to prepare the rest of your Thanksgiving dinner. Enjoy this lighter version of sweet potato casserole, with the ease of slow-cooking!
Prep Time: 20 minutes
Cook Time: 3 hours and 20 minutes
Makes: 12 servings
Ingredients:
3 pounds sweet potatoes, peeled and diced (into 1/2 inch cubes)
2 tablespoons light brown sugar
3 tablespoons melted butter
1 teaspoon vanilla extract
1 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup mini marshmallows
1/2 cup toasted chopped pecans
Preparation:
- Place sweet potatoes, brown sugar, butter, vanilla, salt, pepper, cinnamon and nutmeg in a 5 to 6-quart slow cooker. Stir to coat.
- Cook on high for 3 hours.
- Transfer to a serving dish. Top with marshmallows and pecans. (The heat will partially melt the marshmallows). Enjoy!
