Slow Cooker Apple Confit

This recipe is a healthy delight that can be incorporated into a warm breakfast or enjoyed as a healthy dessert! Try it on top of Greek yogurt or oatmeal in the morning, alone as a snack, or even as a light dessert!

Prep Time: 15 minutes

Cook Time: 2 hours and 15 minutes

Makes: 8 servings

Ingredients:

3 pounds firm cooking or baking apples (i.e. Granny Smith, Golden Delicious or Rome Apple)

1/4 cup sugar

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

Preparation:

  1. Peel the apples and slice in 1/4 inch thick cubes. You should have about 9 cups of chopped apples.
  2. Place the apples in a 4-quart or larger slow cooker. Add sugar and cinnamon and toss to coat well.
  3. Cover with the lid and cook until the apples are very tender but not pureed, about 2 to 2 1/2 hours on high or 4 to 4 1/2 hours on low.
  4. Stir in vanilla extract. Transfer to a bowl and let it cool slightly. Cover and refrigerate until chilled.

May keep refrigerated for up to 4 days.
