Recipe: Sweet & Spicy Quinoa Bowl

This sweet and spicy quinoa bowl is a vibrant and nutritious dish that combines quinoa with a mix of sweet and spicy flavors.

Ingredients

1/3 cup quinoa, raw

1 cup arugula, lightly steamed

½ cup cherry tomatoes, halved

½ cup carrots, shredded

1 small cucumber, sliced

¼ cup corn kernels, canned, drained and rinsed

¼ cup black beans, canned, drained and rinsed

½ medium size avocado, sliced

Dressing

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon honey

¼ teaspoon red pepper flakes

Salt to taste

Pepper to taste

Preparation

  1. In a pot, combine 1/3 cup quinoa with 2/3 cup water. Bring to a boil. Reduce heat, cover and simmer about 15 minutes, until cooked
  2. To prepare each bowl add ½ cup quinoa as base. Add half of the arugula, cherry tomatoes, shredded carrots, cucumber, corn, and black beans. Top with avocado slices.
  3. In a separate bowl add olive oil, lemon juice, honey, red pepper flakes, salt and pepper and whisk until combined.
  4. Add one tablespoon of sweet and spicy dressing over the prepared bowl. Mix all ingredients and enjoy!
