Ingredients
1/3 cup quinoa, raw
1 cup arugula, lightly steamed
½ cup cherry tomatoes, halved
½ cup carrots, shredded
1 small cucumber, sliced
¼ cup corn kernels, canned, drained and rinsed
¼ cup black beans, canned, drained and rinsed
½ medium size avocado, sliced
Dressing
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon honey
¼ teaspoon red pepper flakes
Salt to taste
Pepper to taste
Preparation
- In a pot, combine 1/3 cup quinoa with 2/3 cup water. Bring to a boil. Reduce heat, cover and simmer about 15 minutes, until cooked
- To prepare each bowl add ½ cup quinoa as base. Add half of the arugula, cherry tomatoes, shredded carrots, cucumber, corn, and black beans. Top with avocado slices.
- In a separate bowl add olive oil, lemon juice, honey, red pepper flakes, salt and pepper and whisk until combined.
- Add one tablespoon of sweet and spicy dressing over the prepared bowl. Mix all ingredients and enjoy!
