Ingredients
For the Gnocchi
2 (10-ounce) containers of fresh grape tomatoes
1 pound gnocchi, uncooked
2 tablespoons of olive oil
2 tablespoons balsamic vinegar
2 teaspoons honey
2 teaspoons oregano
2 teaspoons dried basil
6 cloves garlic, minced
Salt and black pepper, to taste
For the Meatballs
1 pound ground turkey
½ cup breadcrumbs
1/3 cup fresh basil or 2 tablespoons dried basil
1 teaspoon dried oregano
½ teaspoon ground black pepper
1 teaspoon salt
2 cloves garlic, minced
1 large egg
1 tablespoon of olive oil
Preparation
- Preheat the oven to 450 degrees Fahrenheit.
- Add all of the gnocchi ingredients to a 9×13 inch baking pan, and stir until gnocchi and tomatoes are coated with ingredients.
- Next make the meatballs, combine all the meatball ingredients, except the olive oil, into a large bowl. Stir until mixture is evenly combined.
- Scoop 2 tablespoons of meat and roll into a ball. Place on top of the gnocchi ingredients in the pan. Ground turkey mixture should make 12 meatballs.
- Once done, drizzle with 1 tablespoon of olive oil.
- Bake for 25 to 30 minutes, until the meatballs are cooked through.
- Store leftovers in an air-tight container for 3 to 4 days.
