Recipe: Kids No Bake Energy Bites

Add this into a balanced, bento-box-style lunch, for added protein and fiber. These can also be an easy, nutrient-dense snack.

Prep Time

10min

Refrigeration Time

30min

Makes

24 pieces (12 servings)

Ingredients

1 ½ cup Unsalted almonds (or nut of choice)

½ cup pitted dates

½ cup dried unsweetened tart cherries (or other unsweetened dried fruit)

¼ cup M&M candies (or chocolate chips)

3 Tbsp unsweetened shredded coconut

3 Tbsp rolled oats

Preparation

  1. Line a 13×9 cookie sheet or baking pan lined with parchment paper.
  2. Place almonds into medium-sized bowl and cover with hot water. Let sit for at least 10 minutes (until nuts have softened slightly and are easier to blend).
  3. Drain nuts from bowl.
  4. Add all ingredients to food processor or blender and grind into a batter. Begin on low setting and after a few seconds, gradually work up to high setting. Stop when batter is similar texture to cookie dough. May need to stop towards the end and scrape down the sides to be sure all of mixture is blended.
  5. Portion bites with a 1 Tablespoon measuring spoon and roll into ball shape.
  6. Place balls onto lined cookie sheet or baking pan.
  7. Refrigerate for 30 minutes.
  8. Serving size is 2 balls. Can refrigerate in airtight container for 1 week or freeze in airtight container and store for up to 6 months.
