Recipe: Rainbow Fruit Pizza

Looking for a fun way to eat a variety of fruits? Try a fruit pizza! With a crunchy granola crust and smooth layer of Greek yogurt topped with your favorite fruits, this recipe is a great option for a refreshing and colorful breakfast or snack.

Ingredients

Granola crust:

1 large egg

1 ½ cups rolled oats

1/2 cup unsweetened shredded coconut

1/3 cup all-purpose flour

1/4 cup coconut sugar

3 tablespoons coconut oil, melted

1/4 cup honey or agave

1/2 teaspoon ground cinnamon

1 teaspoon pure vanilla extract

Pinch of salt

Toppings:

1 cup vanilla non-fat Greek yogurt

1 kiwi, peeled and thinly sliced

1/4 cup fresh strawberries, sliced

1/4 cup blueberries

1/2 fresh mango, sliced

Preparation

  1. Preheat the oven to 450 degrees Fahrenheit.
  2. In a large mixing bowl, combine all ingredients for the granola crust.
  3. Transfer granola mixture into a 9-inch tart pan and press into an even layer.
  4. Bake for 20 minutes. It should be slightly browned on top. Allow the crust to completely cool before removing it from the pan. TIP: place it in the fridge to speed this up!
  5. Spread a layer of vanilla Greek yogurt on top of the crust.
  6. Top with desired fruit in a fun pattern. Cut into slices and serve!
  7. Keep the leftovers in the fridge for up to 5 days. Best enjoyed sooner before the crust gets soggy. This recipe does not freeze well.

Tips on Involving Kids

Younger kids: Have them help with pressing the crust into the tart pan, washing the fruits, or adding the toppings in a fun design! This is a great opportunity for them to learn the colors and names of different kinds of fruit.

Older kids/teens: They can practice washing, peeling, and slicing the fruits for the topping or mix together the ingredients for the granola crust.

Any age: Encourage them to pick their favorite fruits for the topping. This can increase their desire to be involved and make them feel more included.
