Most jams and jellies are packed full of sugar. This jam uses lemon juice to play up the natural sweetness of the strawberries while keeping the sugar content low. As a bonus, this recipe uses heart-healthy chia seeds to help thicken the jam. Enjoy on whole-wheat toast or use to top plain Greek yogurt for a snack or a delicious breakfast.

Ingredients:
2 cups fresh strawberries
2 Tbsps. Chia seeds
1Tbsp freshly squeezed lemon juice OR store-bought bottled lemon juice
1-2Tbsps honey or maple syrup (if needed for additional sweetness)
Preparation:
- Heat fruit in a small saucepan over medium-high heat, stirring occasionally. Once the fruit is heated through and begins to break down and bubble, use a fork or potato masher to mash the fruit to your desired consistency.
- Stir in the chia seeds and lemon juice until combined. Taste. If desired, stir in 1 or 2 Tablespoons of sweetener.
- Remove from heat and let cool for 5 minutes. The jam will thicken as it cools.
- Give the jam one final stir then serve immediately or transfer to a sealed container and refrigerate for up to 1 week. This jam also freezes well for up to 3 months in a freezer-safe container.
