Fresh Strawberry Chia Seed Jam

Most jams and jellies are packed full of sugar. This jam uses lemon juice to play up the natural sweetness of the strawberries while keeping the sugar content low.  As a bonus, this recipe uses heart-healthy chia seeds to help thicken the jam. Enjoy on whole-wheat toast or use to top plain Greek yogurt for a snack or a delicious breakfast.

Total Time: 10 minutes

Makes: 1 cup

Serving size: 1 Tablespoon

Ingredients:

2 cups fresh strawberries

2 Tbsps. Chia seeds

1Tbsp freshly squeezed lemon juice OR store-bought bottled lemon juice

1-2Tbsps honey or maple syrup (if needed for additional sweetness)

Preparation:

  1. Heat fruit in a small saucepan over medium-high heat, stirring occasionally. Once the fruit is heated through and begins to break down and bubble, use a fork or potato masher to mash the fruit to your desired consistency.
  2. Stir in the chia seeds and lemon juice until combined. Taste. If desired, stir in 1 or 2 Tablespoons of sweetener.
  3. Remove from heat and let cool for 5 minutes. The jam will thicken as it cools.
  4. Give the jam one final stir then serve immediately or transfer to a sealed container and refrigerate for up to 1 week. This jam also freezes well for up to 3 months in a freezer-safe container.
