“Cheesy” Stove-Top Popcorn

Written by: Christina Dauer, MPH, RD, LD/N, CDE

Prep Time: 5 minutes

Cook Time: 5 minutes

Makes: 8-10 cups

Ingredients

3 tablespoons olive oil
1/3 cup popcorn kernels
1/3 cup nutritional yeast
Salt, to taste

Directions

  1. Put the olive oil in a 3-quart saucepan and add 3-4 popcorn kernels. Heat over medium high heat.
  2. Wait for the kernels to pop then add the rest of the 1/3 cup of kernels in an even layer and combine with the oil. Cover the pot. The popcorn will start popping soon. Shake around the saucepan as the kernels pop.
  3. Once the popping slows to once every few seconds, remove the pan from the heat.
  4. Pour the popcorn into a bowl, salt to taste, and top with nutritional yeast.
  5. Toss and enjoy!

Nutrition Tip:  This recipe is a savory spin to a movie night classic and full of fiber and healthy fats. The superfood nutritional yeast adds a scrumptious layer of cheesy flavor. Mix it up by adding crushed red pepper, garlic powder, onion powder, or homemade taco seasoning. Bag 2 cups of popcorn for a week’s worth of on-the-go or evening snacks. It’s also cheaper than pre-bagged popcorn and only takes 10 minutes – cleanup included.
