This simple summer salad brings out the fresh taste of ripe tomatoes and cucumbers! Quick to make and easy to enjoy! Enjoy with a summer dinner on the grill, like grilled chicken or salmon and a corn on the cob!
Ingredients:
2 medium ripe tomatoes, diced into chunks
1 small cucumber, diced into chunks
3/4 cup diced fresh mozzarella cheese
2 tablespoons chopped fresh basil
1/4 teaspoon salt
Black pepper to taste
1 teaspoon balsamic vinegar
Preparation:
- Mixed tomatoes, cucumbers, mozzarella cheese, basil, salt, and balsamic vinegar together in a large mixing bowl. Season with black pepper to taste.
- Serve and enjoy.
