Overnight Steel-Cut Peanut Butter and Banana Oatmeal

January is National Crockpot, Soup and Oatmeal Month. With this easy Crockpot recipe eating a healthy breakfast has never been easier!

Cook: 7-8 hrs

Makes 4, ½ cup servings

Ingredients

1 cup steel cut oats

2 cups water

1 cup milk

2 ripe bananas, mashed

¼ cup peanut butter

1 tsp honey (optional)

Directions:

Combine all ingredients except peanut butter and honey in a slow cooker and stir.  Drop peanut butter in small spoonful’s and stir. Cover and set slow cooker on low.  Cook overnight or for 7-8hrs.  Scoop out ½ cup oatmeal into a bowl.  Drizzle with 1 tsp honey before serving if desired.
