4 sandwiches

Ingredients

For the chicken:

3 chicken breasts, boneless, skinless

¼ cup balsamic vinegar

2 tablespoons of honey

1 tablespoon whole-grain mustard

3 cloves garlic, minced

¼ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

For the sandwiches:

1 tablespoon olive oil

1 sweet onion, thinly sliced

8 slices of sourdough bread

1 jar of blackberry jam

1 cup crumbled goat cheese

1 tablespoon parsley

1 tablespoon oregano

4 tablespoons balsamic glaze

1 tablespoon parsley

Preparation

To make the chicken:

  1. Add chicken, balsamic vinegar, honey, whole grain mustard, garlic, salt, and black pepper to a bowl and mix well. Let it marinate for 10 minutes.
  2. In a large skillet, add olive oil on medium-high heat. Remove chicken from marinade and add to the skillet. Cook for about 7 minutes, or until cooked through to 165 degrees Farenheit.
  3. Remove chicken from skillet and place it on a cutting board.
  4. Cut into ¼ inch slices.

To make the sandwiches:

  1. Sauté onions in olive oil until browned. Place onions on a separate dish.
  2. Spread about 1 TBSP of mayonnaise on one side of each slice of sourdough bread slice. The side with the mayonnaise will go pan side down to create a crispier bread.
  3. On the opposite side without mayonnaise, spread a layer of blackberry jam and top with goat cheese, sprinkle of parsley and oregano, chicken slices, caramelized onion, and balsamic glaze.
  4. On the same pan used to cook the onions, add the sandwich and cook for 2 to 3 minutes or until golden brown and crispy. Flip the sandwich to cook on the other side for another 2 to 3 minutes or until golden brown and the cheese has melted.
  5. Transfer to a plate or cutting board and cook the remaining sandwiches.
  6. These are best if consumed warm off the skillet. Cut each sandwich in half and serve with an arugula side salad or our breadcrumb Brussel sprouts!
