4 medium beets
1 tablespoon olive oil
¼ teaspoon salt
Black pepper, to taste
Yogurt Dip:
¾ cup 2% plain Greek yogurt
2 tablespoons chopped mint
1 tablespoon olive oil
½ tablespoon lemon zest
Pinch of garlic powder (optional)
Pinch of salt
Preparation
- Peel and slice each beet into 8 pieces. In a mixing bowl, toss the beets, oil, salt, and pepper together.
