Papaya Breakfast Boats

Nutrition Fact: Celebrate National Papaya Month with this healthy and filling breakfast.  Did you know that papayas contain papain, an enzyme that helps digest proteins?  Papayas are also a rich source of Vitamin C, an antioxidant that can assist in preventing chronic disease.  This breakfast will keep you full and energized all day long as it contains 10g fiber and 21g protein per serving!

Makes 2 servings

Ingredients

1 papaya

1 cup non-fat, plain Greek yogurt

½ cup blackberries

½ cup blueberries

½ cup raspberries

1 tablespoon chia seeds

4 Tbsp. toasted coconut

4 Tbsp. low-fat granola

Directions:

1. Slice your papaya in half, lengthwise.

2. Scoop out the center including all the seeds

3. Fill each papaya with 1/2 cup non-fat, plain Greek yogurt, ¼ cup blackberries, ¼ cup blueberries, ¼ cup raspberries, 2 Tbsp. coconut, and 2 Tbsp. granola.

4. Enjoy!
