Nutrition Fact: April is National Tomato Month! Celebrate with this refreshing, low-calorie treat loaded with vitamins, minerals, and antioxidants. Tomatoes are an excellent source of the antioxidant lycopene, which gives them their bright red color. Research has associated lycopene with a lower risk of some cancers such as prostate cancer, a lower risk of strokes caused from blood clots, and an increased bone health.
