These carrot cake overnight oats are packed with all the flavors that make carrot cake so delicious while being loaded with nutrient-rich ingredients. Meal prep these on the weekends as part of your weekly rotation for an easy, on-the-go breakfast!

Ingredients:
6 tablespoons old-fashioned oats
1 cup shredded carrots
1 cup Greek yogurt, non-fat, plain
½ cup almond milk
¼ cup canned pineapple, in juice
¼ cup raisins
¼ cup walnuts
2 tablespoons honey
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 teaspoons vanilla extract
¼ teaspoon salt
Preparation:
- Gather all the ingredients, place in a medium-sized mixing bowl, and stir until well-mixed.
- Spoon half of the mixture into 2 separate mason jars.
- Store in the refrigerator overnight until ready to eat, at least 4-6 hours.
- Serve warm (re-heated in the microwave) or cold.
