Recipe: Fresh Cucumber Salad

This salad comes together so fast, using only a few simple ingredients. Perfect for a refreshing snack or an easy vegetable side with your main meal.

Ingredients

2 large English cucumbers, thinly sliced

1½ teaspoons sugar

1½ teaspoons salt

2½ tablespoons red wine vinegar

½ red onion, thinly sliced

2 tablespoons fresh dill

Preparation

  1. In a medium bowl, toss the cucumber slices with the sugar and salt until well combined and let it stand for 5 minutes.
  2. Stir in the vinegar and onion.
  3. Garnish with fresh dill. Serve immediately or store in an airtight container in refrigerator for up to 3 days.
