Recipe: Apple Cider Vinegar Coleslaw

An apple cider vinegar–based coleslaw is a lighter, heart-healthy twist on the classic dish because it skips mayonnaise, significantly reducing saturated fat and total calories. Packed with cabbage and carrots, it provides fiber, vitamin C, and antioxidants that support digestion, immunity, and overall health. Quick and easy to prepare, this refreshing side pairs well with almost any meal.  We suggest pairing with our honey mustard chicken thighs.

Coleslaw

  • 1/2 head green cabbage, shredded or thinly sliced
  • 1/2 head red cabbage, shredded or thinly sliced
  • 2 large carrots, peeled and shredded or thinly sliced
  • 3 green onion, thinly sliced

Vinegar dressing

  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tablespoon grainy or Dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon celery seed
  • Salt and pepper to taste

Preparation

  1. In a large bowl, add the green cabbage, red cabbage, carrot and green onion, and toss until well combined.
  2. In a small bowl or jar, combine the apple cider vinegar, olive oil, mustard and honey, celery seed and whisk until well combined.
  3. When reading to eat, cover the cabbage mixture with the dressing.
  4. Season with salt and pepper to taste and chill in the fridge before serving.
  5. This vinegar coleslaw can be served immediately or stored in the fridge for up to 3 days.
