Double Chocolate Zucchini Bread

This recipe is a must-have in your baked goods holiday catalogue. Loaded with cocoa powder and chocolate chips, no one will know this recipe has lots of added nutrients from zucchini. The added Greek yogurt is the key to making this a moist and decadent bread!

Ingredients

3 cups grated zucchini

2 cups whole wheat flour

1 cup brown sugar

½ cup granulated white sugar

1 cup unsweetened cocoa powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

2 eggs

½ cup olive or avocado oil

½ cup plain Greek yogurt

1 cup dark chocolate chips

 

Preparation

  1. Preheat the oven to 350 degrees Fahrenheit, with a rack in the center of the oven. Grease 2 -9×5-inch loaf pans with cooking spray.
  2. In a large bowl, whisk together the flour, sugars, cocoa powder, baking soda, salt, and cinnamon until well combined and there are no clumps. Set aside.
  3. In another mixing bowl, beat the eggs, oil, Greek yogurt, and vanilla extract together until well combined.
  4. Mix the grated zucchini into the wet ingredients and fold until just combined. Add the dry ingredients to the zucchini mixture in 3 additions, folding to combine after each addition. Then stir in the chocolate chips.
  5. Scrape the batter into the prepared pans and sprinkle chocolate chips on top.
  6. Bake until a toothpick/butter knife inserted in the center comes out clean (about 55 to 65 minutes). Place on a wire rack to cool for about 10 minutes, then remove the bread from the pan and cool completely.
  7. Once cool, cut each loaf into 8 slices and enjoy.
